I'm trying to set a questbook so that they have to complete one item named "Evidence" to complete the quest.

I've tried things like;

COLLECT,<item/name/evidence>

COLLECTNAMED,evidence

COLLECT,item,name,evidence

etc to no avail.

Any ideas?

try this

/objectiveX/COLLECTNAMED,evidence,Y

Where X is the number of your objective (1-5) and Y is the number of item named "evidence" you want the player to collect.

Make sure the item is named "evidence" the thing is case sensitive, so if you named your item Evidence, it won't be recognized.
